Pumpkin – Granola Muffin

Pumpkin - Granola Muffins

Hearty - Super Yum Muffins

  • Oven
  • Cupcake pan
  • Cupcake liners
  • 3 Eggs
  • 1/2 C. Avocado Oil
  • 1/2 C. Unsweetened Nut Milk
  • 1 tsp Baking Powder
  • 1 Tbsp Pumpkin Pie Spice (Be sure it isn't sweetened)
  • 1/2 C. Monk Fruit Sweetener
  • 2 C. Almond of Coconut Flour
  • 40 g. Collagen Protein Powder (Choose un-flavored)
  • 3/4 C. Pumpkin Puree
  • 1/2-3/4 C. Keto Granola (If you don't have keto granola chop up nuts, or any granola that is "grain-free")
  1. Mix wet ingredients

  2. Add collagen and blend well

  3. Add flour base

  4. Use cupcakes liners so muffins don't stick.

  5. Bake at 350 for 21 minutes.
