Pumpkin - Granola Muffins
Hearty - Super Yum Muffins
- Oven
- Cupcake pan
- Cupcake liners
- 3 Eggs
- 1/2 C. Avocado Oil
- 1/2 C. Unsweetened Nut Milk
- 1 tsp Baking Powder
- 1 Tbsp Pumpkin Pie Spice (Be sure it isn't sweetened)
- 1/2 C. Monk Fruit Sweetener
- 2 C. Almond of Coconut Flour
- 40 g. Collagen Protein Powder (Choose un-flavored)
- 3/4 C. Pumpkin Puree
- 1/2-3/4 C. Keto Granola (If you don't have keto granola chop up nuts, or any granola that is "grain-free")
Mix wet ingredients
Add collagen and blend well
Add flour base
Use cupcakes liners so muffins don't stick.
Bake at 350 for 21 minutes.
