Red Lentil Soup

- Slow Cooker
Ingredients
- 2-3 cups Chicken Already cooked and cubed
- 2 cups Dry Red Lentils
- 6 cups chicken broth
- 1 can fire roasted diced tomatoes 14 ounces
- 1 onion chopped
- 4-5 cloves garlic minced
- 1 tbsp olive oil
- 1 tbsp ghee
Instructions
- Pre-Cook chicken or use store bought
- In skillet add ghee, olive oil, onion and garlic - cook until softened
- Add all ingredients except chicken to slow cooker / crock pot
- 30 minutes prior to eating add chicken
Notes
This is a great warm treat when you've got a busy day and you are on the go. Prep is easy, especially if you've got a rotisserie chicken or leftovers from a previous meal.
