Equipment

  • Slow Cooker

Ingredients

  • 2-3 cups Chicken Already cooked and cubed
  • 2 cups Dry Red Lentils
  • 6 cups chicken broth
  • 1 can fire roasted diced tomatoes 14 ounces
  • 1 onion chopped
  • 4-5 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp ghee

Instructions

  • Pre-Cook chicken or use store bought
  • In skillet add ghee, olive oil, onion and garlic - cook until softened
  • Add all ingredients except chicken to slow cooker / crock pot
  • 30 minutes prior to eating add chicken

Notes

This is a great warm treat when you've got a busy day and you are on the go.  Prep is easy, especially if you've got a rotisserie chicken or leftovers from a previous meal.
