Roasted Root Veggies
- 1 pkg. Carrots (I use the multi colored organic)
- 5-6 small Baby potatoes
- 1/2 onion
- 3-4 cloves garlic
- 1 tsp Trader Joe's 21 Seasoning
- 1 tsp Himalayan Sea Salt
- 1 Tbsp Avocado Oil
- 1/2 tsp Tumeric
- 1/2 tsp Smoke Paprika
Pre-heat oven to 400 degrees
Corsley chop all veggies. Ideal is 1 inch pieces
Add oil to cast oil skillet - when heated add veggies
Cook until just tender, then put in the oven for 5-10 minutes depending on tenderness desired.
This is a great addition to any grilled meat. Add rice to the side, if you want more carbohydrates. Don't want the extra carbs, serve with a green salad.
