Equipment

  • Smoker

Ingredients

  • 4 tbsp coconut sugar Per Quart for the Brine
  • 4 tbsp Himilayan Sea Salt Per Quart for the Brine
  • 3 quarts water
  • 2 Turkey Wings
  • 2 Turkey Legs

Instructions

  • Bring 3 quarts of water to boil
  • Add in sugar and salt
  • Heat to dissolve brine
  • Cool quickly with ice
  • Add turkey legs and wings to brine. Refrigerate till ready.
  • Heat smoker to 225
  • Smoke turkey until it reaches 165 degrees internal. Turn up the heat for last 10 minutes if you want crispy skin.
