Spicy Pumpkin Chili
Warm and Comforting with a Kick
- 1 lb. Ground Chicken or Turkey (Prefer Organic Pasture Raised)
- 1/2 Red Onion (Chopped)
- 3 Celery Stalks (Sliced)
- 3 Garlic Cloves (Minced)
- 1 tsp Cumin
- 1 Tbsp Chili Powder
- 1 Tbsp Avocado or Olive Oil
- 1 C. Chicken Broth
- 1 can Black Beans (any type of beans will work)
- 1 can Pumpkin Puree (be sure its puree and not pie mix)
- 1 can Fire Roasted Diced Tomatoes
- 1 tsp Chopped Chipotles (I used a jar found in Hispanic Section of Grocery Store)

Add oil to pot to heat up. Then cook onion, celery and garlic for 3-4 minutes.

Add meat and spice, and cook until meat is browned.

Add all other ingredients and let simmer for up to 30 min.
This soup is a such a yummy treat. It feels so comforting and filling.
