Strawberry Walnut Muffins

Equipment

  • Oven
  • Muffin Tins
  • Muffin Liners

Ingredients

  • 2 1/2 C. Almond Flour
  • 1/2 C. Monk Fruit
  • 1/2 tsp Baking Powder
  • 1/2 C. Olive Oil
  • 1/2 C. Unsweetened Vanilla Almond Milk
  • 3 Lg. Eggs
  • 1/2 tsp Pure Vanilla Extract
  • 3/4 C. Strawberries Chopped up small
  • 1/2 C. Walnuts Chopped up small

Instructions

  • Pre-heat oven to 350 degress adn line muffin tin
  • Mix oil, sweetener, vanilla, almond milk and eggs
  • Add in baking powder and almond flour
  • Fold in strawberries and walnuts (texture is best if you only stir these in and don't over beat).
  • Scoop into muffin tins. Mine usually makes about 15 if using a cooking cupcake serving spoon.
  • Bake 21-23 minutes. They will seem a little undercooked when removing, that's ok, it will keep them from drying out.
  • Store any leftovers in the fridge.
