Tandoori Chicken and Vegetables

Tandoori Chicken and Vegetables

Easy authentic meal

  • 1/2 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 3 tsp Smoked Paprika
  • 2 tsp Minced Garlic
  • Pinch Sea Salt
  • 3 Tbsp Extra Virgin Olive Oil
  • 1 Eggplant sliced
  • 1/2 lb. Multi Colored Carrots
  • 4 Skinless chicken thighs
  1. Mix all spices with olive oil

  2. Pour half of marinade over chicken and let sit for at least 30 min.

  3. Pour other half of marinade over chopped veggies

  4. Grill...and serve

This is a tasty meal with great veggies.  If you'd like to add additional carbohydrates try pairing it with rice or couscous.
