Healthy Mexican Cusine
- 1 lb. Ground Turkey, Chicken or Beef (prefer organic pasture raised)
- 1 pkt Taco Seasoning (look for healthy options, Thrive Market has some great ones)
- 12 Low Carb Tortillas
- 1 can Refried Beans (organic black or pinto)
- 1 Tbsp avocado oil
- 1/2 c. Cheese (optional)
- 1 tomato (chopped. optional)
- 1 head of lettuce (chopped. optional)
- 1 jar salsa (optional)
Turn oven on to 375 degrees
Place tortillas on pan, and brush on avocado oil, then bake 8-10 minutes
While cooking tortillas cook meat with taco seasoning
Warm beans in pot on stove
When tortillas are done, spread with beans and then top with meat and any toppings you like
When you are looking for a yummy Mexican crunch without all the carbs this recipe will hit the spot. We prefer the whole what low carb tortillas. For my kids, I will use organic corn tortillas and cook them like I do the ones for my husband and I.
Serve with a fresh green salad to get all your veggies in.
