Vegan Veggie Rice Bowl

Light lunch or dinner meal - can even make to eat on the go

  • 1/2 cup jasmine rice
  • 1/2 cup black beans
  • 1/2 cup zucchini
  • 1/2 cup Portabello mushrooms
  • 1/2 cup diced tomatoes
  1. Cook rice in rice cooker

  2. Saute all veggies using vegan butter or avocado oil, use herbs to taste (NOTE: Black beans were canned and soaked in water over night)

  3. Mix with rice and enjoy!

Doing our detox - no problem.  Swap the rice with a non-grain!  Cauliflower rice is a great option, so are lentils or quinoa.
