White Chicken Chili

Equipment

  • Crock Pot

Ingredients

  • 1 pound Ground chicken or turkey
  • 1 whole onion
  • 1 cup carrots chopped
  • 1/2 cup celery chopped
  • 3 cloves garlic chopped
  • 1 14 oz. can fire roasted diced tomatoes tomatoes and juice
  • 2 14 oz. can white kidney beans rinse beans
  • 2 6 oz. can chopped green chiles
  • 1 tbsp olive oil
  • 2-3 cups chicken stock

Instructions

  • Brown chicken or turkey in large frying pan
  • Add this to crock pot with chicken stock
  • Add 1 tbsp olive oil to pan with all veggies except diced tomatoes and green chiles
  • Cook 5-10 minutes
  • Add all ingredients to the crock pot
