White Chicken Chili

White Chicken Chili

Chili filled with fiber and low fat lean protein

  • 1 pound Ground chicken or turkey
  • 1 whole onion
  • 1 cup carrots (chopped)
  • 1/2 cup celery (chopped)
  • 3 cloves garlic (chopped)
  • 1 14 oz. can fire roasted diced tomatoes (tomatoes and juice)
  • 2 14 oz. can white kidney beans (rinse beans)
  • 2 6 oz. can chopped green chiles
  • 1 tbsp olive oil
  • 2-3 cups chicken stock
  1. Brown chicken or turkey in large frying pan

  2. Add this to crock pot with chicken stock

  3. Add 1 tbsp olive oil to pan with all veggies except diced tomatoes and green chiles

  4. Cook 5-10 minutes

  5. Add all ingredients to the crock pot
