White Chicken Chili
Chili filled with fiber and low fat lean protein
- 1 pound Ground chicken or turkey
- 1 whole onion
- 1 cup carrots (chopped)
- 1/2 cup celery (chopped)
- 3 cloves garlic (chopped)
- 1 14 oz. can fire roasted diced tomatoes (tomatoes and juice)
- 2 14 oz. can white kidney beans (rinse beans)
- 2 6 oz. can chopped green chiles
- 1 tbsp olive oil
- 2-3 cups chicken stock
Brown chicken or turkey in large frying pan
Add this to crock pot with chicken stock
Add 1 tbsp olive oil to pan with all veggies except diced tomatoes and green chiles
Cook 5-10 minutes
Add all ingredients to the crock pot
