Zoodle Chicken Sausage

Ingredients
- 2 cups Zucchini Zoodles
- 1/2 Red Pepper
- 8-10 stalks Asparagus
- 1 Tbsp Crushed/Chopped Garlic
- 1 pkg Organic Chicken Sausage use pre-cooked, or allow more time to cook sausage
- 2 cups Brown Rice
- 1 Tbsp Ghee
Instructions
- If not already cooked, cook the sausage and rice (I used the easy cook organic brown rice from Trader Joe's)
- Chop asparagus (3 pieces per stalk) and red pepper
- Add Ghee to skillet, when warm add Zucchini Zoodles (I actually used the frozen Organic Green Giant from Costco)
- Add in peppers, garlic and asparagus
- Add sausage (I cut it into slices)
- Continue to cook until sausage is heated through and noodles are softened
Notes
This is a super easy weekday or weekend meal when you don't feel like cooking but want something yummy with lots of veggies.
Once meat/veggies are cooked, add 1/2 cup rice to the bottom of bowl and add mix on top. Serve immediately.
*You can also add additional veggies. Others I will try in the future - onion, mushrooms, brussel spouts.
If you are doing the detox, this meal is approved if you swap the brown rice for cauliflower rice - BONUS - even more veggies!
