Zucchini Fries

Zucchini Fries

Zucchini Fries without all the flour and oil!

  • 2 lg. Zucchini (Cut in 3 inches long and 1/4 inch thick)
  • 1/3 C Tapioca Flour
  • 1 C Almond Flour
  • 2 lg. Eggs
  • 1 tsp Garlic powder
  • 1 tsp Onion Salt
  • 1/2 tsp Oregano
  • 1/2 tsp Smoked Paprika
  • 1-2 C Marinara Sauce (I love Rao's)
  1. Take out the zucchini about 30 minutes prior to cooking, and cut, so they have time to dry.

  2. Mix together all spices with almond flour (do not mix in tapioca flour)

  3. Coat the fries first in tapioca (tap off excess), then coat with egg, then with the almond spice mix. Do this for each fry.

  4. Place fries on cookie sheet and freeze for 30-45 minutes.

  5. Cook in the air fryer at 375 degrees from 20-24 minutes, until your preferred level or crispiness.

  6. Serve with Marinara.

All the crunch and goodness of a zucchini fry without the oil, gluten and guilt!
