Strawberry Walnut Muffins

Ingredients
- 2 1/2 C. Almond Flour
- 1/2 C. Monk Fruit
- 1/2 tsp Baking Powder
- 1/2 C. Olive Oil
- 1/2 C. Unsweetened Vanilla Almond Milk
- 3 Lg. Eggs
- 1/2 tsp Pure Vanilla Extract
- 3/4 C. Strawberries Chopped up small
- 1/2 C. Walnuts Chopped up small
Instructions
- Pre-heat oven to 350 degress adn line muffin tin
- Mix oil, sweetener, vanilla, almond milk and eggs
- Add in baking powder and almond flour
- Fold in strawberries and walnuts (texture is best if you only stir these in and don't over beat).
- Scoop into muffin tins. Mine usually makes about 15 if using a cooking cupcake serving spoon.
- Bake 21-23 minutes. They will seem a little undercooked when removing, that's ok, it will keep them from drying out.
- Store any leftovers in the fridge.
