Ingredients
- 2 C. Almond Flour
- 4 Scoops Collagen Protein Powder
- 1/2 C. Monk Fruit Sweetener
- 1/2 tsp Baking Powder
- 1/2 C. Unsweetened Almond Milk
- 1/2 C. Olive Oil
- 3/4 C. Pumpkin Puree
- 3 Lg. Eggs
- 1/2 tsp Vanilla Extract
- 1/4 C. Pumpkin Seeds
- 1/3 C. Chocolate Chunks Sweetened with either Monk Fruit or Stevia
Instructions
- Pre-heat oven to 350 degrees
- Add dry ingredients (except for chocolate and pumpkin seeds)
- Mix in wet ingredients
- Scoop into lined muffin cups. Sprinkle top of muffins with 3-4 chocolate chunks and some pumpkin seeds.
- Bake for 21 minutes.
