Grain Free Meatballs

Grain Free Meatballs

Equipment

  • Rimmed cookie sheet
  • Oven safe glass dish (8×8 pyrex)

Ingredients

  • 1 lb. Ground Chicken Pasture raised, organic
  • 1 lg. Egg Pasture raised, organic
  • 1/4 C. Flax meae
  • 1 clove Garlic minced
  • 1 Tbsp Oregano
  • 1 Tbsp Dried Thyme
  • 1 tsp Pink Salt
  • 2 tsp Onion powder
  • 1/2 Tbsp Dried Basil
  • 16 oz. Rao's pasta sauce or similiar look for no sugar added sauce
  • 1/4-1/2 C. Parmesan Cheese for servings
  • Favorite gluten free pasta/zoodles

Instructions

  • Preheat oven to 350 degrees
  • In a bowl mix chicken, herbs, egg and flax meal. Once mixed roll into 8 large or 12 small meatballs.
  • Place meatballs on cookie sheet and cook for appoximately 12 minutes.
  • Once cooked, put meatballs in glass pyrex dish and pour pasta sauce over them. Then place back into the oven and cook for an additional 5 minutes.
  • Serve with your favorite pasta, or keep it super clean with zoodles!

Notes

The best tasting grain free meatballs.  If you can have dairy, sprinkle with the parmesan cheese right before serving.
*Not going low carb, serve these with your favorite pasta.  By eliminating the grains in the meatballs, these become healthier and lower carb, still!
