Pumpkin – Granola Muffins

Equipment

  • Oven
  • Cupcake pan
  • Cupcake liners

Ingredients

  • 3 Eggs
  • 1/2 C. Avocado Oil
  • 1/2 C. Unsweetened Nut Milk
  • 1 tsp Baking Powder
  • 1 Tbsp Pumpkin Pie Spice Be sure it isn't sweetened
  • 1/2 C. Monk Fruit Sweetener
  • 2 C. Almond of Coconut Flour
  • 40 g. Collagen Protein Powder Choose un-flavored
  • 3/4 C. Pumpkin Puree
  • 1/2-3/4 C. Keto Granola If you don't have keto granola chop up nuts, or any granola that is "grain-free"

Instructions

  • Mix wet ingredients
  • Add collagen and blend well
  • Add flour base
  • Use cupcakes liners so muffins don't stick.
  • Bake at 350 for 21 minutes.
