Chocolate Chip Muffins

Chocolate Chip Muffins

Equipment

  • Muffin tin (for 18)
  • Muffin Liners

Ingredients

  • 2 C. Almond Flour
  • 4 scoops Collagen Protein Powder unflavored
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 C. Cacoa powder Not cocoa powder…
  • 3/4 C. Unsweetened almond milk
  • 1/2 C. Avocado Oil
  • 3 Lg. Eggs
  • 1/2 tsp Baking Soda
  • 3/4 C. Chocolate Chips* 1/2 for mix, 1/4 for topping

Instructions

  • Preheat over to 350 degrees
  • Mix all wet ingredients (milk, eggs, oil)
  • Add in all dry ingredients except for 1/4c. Chocolate Chips
  • Use "muffin" scoop and put in muffin liners. Makes approximately 18
  • Before baking, sprinkle remaining 1/4 c. Chocolate chips on top of muffins.
  • Bake for 21 minutes

Trader Joe’s 72% Cacao, Enjoy or Libby’s Chocolate Chips.
