Vegan Veggie Rice Bowl

Ingredients

  • 1/2 cup jasmine rice
  • 1/2 cup black beans
  • 1/2 cup zucchini
  • 1/2 cup Portabello mushrooms
  • 1/2 cup diced tomatoes

Instructions

  • Cook rice in rice cooker
  • Saute all veggies using vegan butter or avocado oil, use herbs to taste (NOTE: Black beans were canned and soaked in water over night)
  • Mix with rice and enjoy!

Notes

Doing our detox - no problem.  Swap the rice with a non-grain!  Cauliflower rice is a great option, so are lentils or quinoa.
