Chicken Potato Soup

Hearty and Comforting Soup

Equipment
- Crock Pot / Slow Cooker
- Pan (not necessary but makes the flavors pop)
Ingredients
- 1 lb. Chicken Thighs Organic Free Range
- 2 cups Chicken Bone Broth
- 1 onion chopped
- 4 carrots chopped
- 3-4 cloves garlic fresh is best
- 1 Tbsp Ghee or Grass Fed Butter
- 1 Tbsp Olive Oil
- 1/2 lb. potatoes of choice peeled and chopped
- 1/2 - 1 tsp Cayenne Pepper
- 1/2 - 1 tsp Himalayan Sea Salt
- 1/2 tsp Black Cracker Pepper
Instructions
- Put Ghee and Olive Oil in large skillet and heat up
- Add onions and garlic and cook until opaque (this step is extra, you can add all to crock pot)
- Add all ingredients to crock pot and let cook on high 4 hours, low 8 hours
Notes
When you are on the go, this soup makes a great treat to come home too. Post detox I love potatoes, they make me happy and I incorporate them into my meals 2-3 times a week since I avoid most grains. And, bonus, no one knows how good this soup is because it tastes to good!
