- Air Fryer
Ingredients
- 1-2 lbs. Chicken Thighs Use organic pasture raised
- 2 eggs Organic, beaten
- 1/2 C. Almond Flour
- 1/4 C. Parmesan Cheese
- 1 Tbsp Italian Seasoning
- 1 C. No Sugar Added Marinara Sauce I prefer Rao's
- 1/2 C. Shredded Mozarella Organic
- Non-stick spray Avocado, Olive or Coconut (Not Canola)
Instructions
- Mix parmesan cheese, almond flour and italian season in a bowl (big enough to place chicken thighs in)
- Beat eggs
- Turn on air fryer to 400 degrees
- Cover chicken thigh in egg, then with cheese/flour mix, place in Air Fryer.
- Do this for remaining thighs. You might have to do in two batches if doing 2 lbs. I only did 1 lbs. and it all fit.
- While these are cooking, warm up marinara sauce and cook zucchini noodes. I cheat and use the microwaveable ones. Fresh work too...just don't overcook.
- When chicken is done, sprinkle mozzarella cheese on it; place on plate with zucchini noodels and cover with marinara sauce. Enjoy.
Notes
This recipe is sure to please those looking for all the comfort a chicken parm. I served it with regular noodles for my kids.
Detox: if you are doing the detox, this is approved for Steps 1-5; but not after dairy has been removed. You can make this recipe without the parmesan and without the mozzarella and then it would be approved. It is grain and sugar free.
Non Detox: Serve with toasty french bread.
