Almond Bathed Chicken Nuggets

Ingredients
- 1/2 C. Unsweetened Almond Milk be sure it does not have vanilla flavor or any sweetener
- 1/4 tsp Garlic Powder
- 1 C. Almond Flour
- 1 Large Egg
- 1/4 C. Parmesan Cheese
- 1 tsp Italian Seasoning I used Trader Joes Everything Seasoning
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 lb. Chicken Thighs Organic – pasture raised please!
- Olive or Avocado OIl Spray
Instructions
- Pre-heat the oven to 425 degrees.
- Cut chicken into nugget sized pieces
- Mix almond flour, seasonings and parmesan cheese in one bowl
- In another bowl mix egg and almond milk
- Prepare baking sheet. I line mine with parchement paper and give it a light spray with cooking oil
- Dip nuggest into egg/milk mix and then roll in almond mix
- Place on pan
- Cook for about 20 minutes; be sure to flip them over half way through cooking
Notes
These were such a treat! I highly suggest you use the chicken thighs as they give you the extra fat, making these taste amazing. My kids kept going back for seconds.
We served them with a low sugar bbq sauce, mashed potatoes and asparagus.
