Chocolate Chip Cookies

Ingredients
- 1/2 cup butter (softened)
- 1/2 cup monk fruit OR 1/4 c monk fruit 1/4c coconut sugar
- 1 tsp vanilla
- 2 eggs
- 2 1/2 cups Almond Flour Can substitute for coconut flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips look for 72% Cocao or higher chocolate chips
- 1/2 cup no sugar added peanut butter
Instructions
- Preheat over to 350 degrees
- Line baking sheets with parchment paper
- Mix butter, sugar, peanut butter and vanilla (its best to use a mixer if you have one)
- Stir in almond flour, baking soda and salt
- Gently stir in chocolate chips
- Drop Tbsp sized ball onto parchment lined pan
- Cook for 12 minutes

All my kids asked was "Mom, how did you make these? They are different but sooooo good". I wasn't really sure how they'd turn out, but they are amazing - and we make them almost every week. Makes about 24-30 cookies.
If you are doing the detox, use a cookie scooper to make these in uniform size. You can have up to 2 per day. These are not low calorie...but they are approved.
