Ingredients
- 3 lg. Eggs
- 1/2 C. Olive Oil
- 1/2 C. Unsweetened Almond Milk
- 1 tsp Baking Soda
- 1/2 C. Monk Fruit Sweetener
- 1/2 C. Chopped Walnuts
- 1 1/2 C. Almond Flour
- 1/4 C. Coconut Flour
- 4 scoop Collagen Powder I used un-flavored
- 1/4 C. Flax Seed Flour
- 1 Very Ripe Banana
- 1 Grated Zucchini
Instructions
- Add all ingredients and mix
- If possible use muffin scoop for even sized muffins. Use muffin liners or these will stick to the pan.
- Cook at 350 degrees for 23 minutes
