Banana Zucchini Muffins

Your powerhouse snack, pre-workout snack or dessert! Less guilt since these have added protein from collagen powder, healthy fats (almond flour and walnuts) and no added sugar!

Equipment

  • Muffin Tins
  • Cupcake liners
  • Oven

Ingredients

  • 3 lg. Eggs
  • 1/2 C. Olive Oil
  • 1/2 C. Unsweetened Almond Milk
  • 1 tsp Baking Soda
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 C. Chopped Walnuts
  • 1 1/2 C. Almond Flour
  • 1/4 C. Coconut Flour
  • 4 scoop Collagen Powder I used un-flavored
  • 1/4 C. Flax Seed Flour
  • 1 Very Ripe Banana
  • 1 Grated Zucchini

Instructions

  • Add all ingredients and mix
  • If possible use muffin scoop for even sized muffins. Use muffin liners or these will stick to the pan.
  • Cook at 350 degrees for 23 minutes
