Chicken Lettuce Cups

Equipment

  • Skillet

Ingredients

  • 2 Tbsp Avocado Oil
  • 1 lb. Ground Chicken or Turkey
  • 1 Onion Chopped
  • 1 Red Bell Pepper Chopped
  • 2 cloves Garlic Minced
  • Butter or Romaine Lettuce for Serving
  • 2 Tbsp Coconut Aminos* *for the sauce
  • 2 Tbsp Rice Vinegar* *for the sauce
  • 1 Tsp Sesame Oil* *for the sauce

Instructions

  • Heat oil in skillet
  • Add chicken and cook until browned (about 10 minutes) then transfer to plate.
  • Add onion, garlic, pepper and cook 3-5 minutes, then add back in the chicken.
  • Whisk together coconut aminos, rice vinegar and sesame oil and pour over chicken/veggies.
  • Serve in the lettuce cups.

Notes

Easy dinner that is paleo, gluten free, whole 30 and detox approved.  I will be using this sauce more often to replace my Hoisin sauce (which is generally full of sugar).
