Chile Relleno Casserole

Equipment

  • Skillet
  • Oven safe 8x8 dish

Ingredients

  • 1/2 lb. Ground Chicken or Turkey
  • 1/2 c. Diced onions
  • 1 c. Shredded cheese any of your faves will work, we use Mexican cheese
  • 4 Eggs
  • 1/3 pkt Taco Seasoning
  • 2 cans Diced green chiles 4oz. cans

Instructions

  • Preheat oven to 375 degrees
  • Brown meat in skillet with non stick spray with onion
  • While cooking, mix eggs, cheese and seasoning bowl
  • Spray 8x8 pan with non stick spray (I use the real olive oil spray) and then line bottom of pan with the chiles.
  • When cooked, add meat/onion mix on top of the chiles
  • Pour egg cheese mixture oven meat and stick in oven.
  • Cook for 20 minutes or until the mixture is set and golden.

Notes

There is nothing better than chiles stuffed with eggs and cheese and deep fried - right?  Um, all the added calories and breading.  This recipe gives you all the great flavors but in a keto / non grain, not deep fried version.
Able to up the carbs in your plan - serve this with whole wheat toast.  Keeping it low carb - top with salsa and sour cream.
Doing our 21 day detox...ok, just omit the cheese/sour cream if you've already gone dairy free.
