Coconut Chicken Stir Fry

Ingredients
- 1 lb. ground chicken
- 1/2 c. full fat coconut milk
- 2 tsp minced garlic
- 25 matchstick carrots
- 2 green onions (sliced thin)
- 2 Tbsp reduced sodium/gluten free soy sauce
- 1/2 c diced pineapple
- 2 c. Jasmine or Cauliflower Rice
Instructions
- Add coconut milk and garlic to wok and heat until bubbling
- Add ground chicken, and cook until just brown
- Add in carrots, green onions and pineapple, cook 5-10 min.
- Add in soy sauce
- Serve over rice
Notes
This is a great menu item for a busy evening. Great paired with asparagus or green beans.
To make these detox approved - use only cauliflower rice and reduce the pineapple to only 1 cup.
