Coconut Curry Soup

Yummy comfort food creamy soup, that is dairy free!

Equipment
- Slow Cooker
- Immersion Blender
Ingredients
- 1 pound Organic Boneless/Skinless Chicken thighs
- 1 onion (chopped)
- 1 can Organic Coconut Milk (not low fat)
- 4 carrots (chopped)
- 1 pkg frozen cauliflower rice
- 1 orange pepper (chopped)
- 1 jar Trader Joe's Thai Red Curry Sauce
- 2 tsp olive oil or ghee
Instructions
- Add coconut milk and chicken thighs to crockpot, turn on low
- Add ghee or olive oil to skillet, add all chopped veggies and cook until tender
- Add vegetables to the crock pot, along with cauliflower rice
- After chicken is cooked, pull in out and chop it, set aside
- Add curry sauce to veggies in the crock pot. Use immersion blender and cream.
- Add chicken back in and simmer until ready to eat.
Notes
This soup is super creamy with a hint of sweetness from the coconut. If you can enjoy some additional grains - server with warm Naan bread or over Jasmine rice.
Makes a perfect complete meal served with a salad.
