Equipment

  • Skillet

Ingredients

  • 1.5 lbs. Organic Chicken Thighs Chopped 1 inch pieces
  • 1 can Coconut Milk
  • 1 jar Curry Sauce I prefer the Trader Joe's Red Curry
  • 12-16 oz. Green Vegetables
  • 12-16 oz. Cauliflower Rice the microwave bags are super simple here
  • 1 Tbsp Avocado or Olive Oil

Instructions

  • Add 1 Tbsp oil to skillet to heat up med/high heat
  • Chop up raw chicken and add to skillet to brown
  • Reduce heat to simmer and add coconut milk
  • After simmering for about 20 minutes add jar of curry sauce, continue to simmer for 10 min.
  • Microwave or stove top cook cauliflower rice and veggies (my faves are green beans, broccoli or asparagus). Also can be paired with a green salad.
  • Add rice to bowl, then add curry/chicken to bowl and serve along green veggie.

Notes

While I love my slow cooker recipe for days when it is busy, this is as close to authentic curry as I can get with a home cooked recipe.  My family loves this one.  Try it with different types of curry sauce – my faves are all from Trade Joe’s since they are low to no sugar and all the ingredients are detox approved.
Its hard to believe something this good can be detox approved.
Non detox – add jasmine rice or naan to make this meal that much better!
