Kale Salad
Quick fiber rich salad

Ingredients
- 1 c Organic Kale
- 1/2 c Organic Spinach
- 2 Tbsp Bragg's Organic Vinegar Dressing
- 10 Black Olives
- 3 Cherry Tomatoes I like mine sliced up
- 1 Tbsp Sunflower Seeds
- 4 oz. Chicken Skewer or any leftover grilled/baked protein
Instructions
- Mix Bragg's dressing with Kale and Spinach (if you have time, do 30 minutes prior and massage into greens)
- Assemble salad with the rest of the ingredients
- Protein can be added hot or cold. If you don't have already prepared protein, you can do 2 hard boiled eggs, 2 scrambled eggs or a fish packet. I like having already cooked chicken skewers on hand.
Notes
This salad is super tasty. If you aren't a fan of kale (like me), allow the vinegar to work its magic and mix it with the kale ahead of time. The bitter bite from the Bragg's apple cider vinegar dressing cuts down the kale taste.
