Mock Mashed Potatoes

Ingredients
- 1 large cauliflower head
- 1 tsp low/no sodium chicken bouilion
- 2 tbsp ghee or butter
- 2 tbsp cashew milk or milk, half or half or cream
- 2 tsp mixed herbs: garlic, black pepper, onion powder It's really all about personal preference
Instructions
- Pre-heat oven to 375.
- Boil cauliflower till it falls apart when stuck with a fork.
- With food processor, blend all ingredients. Some people like to leave lumps to make it even more like real mashed potatoes.
- Spray oven proof pan with cooking spray or coconut oil.
- Pour mixture in pan. Add a few pats of butter if you like a more buttery flavor. Sprinkle garlic on top for added flavor.
- Bake for 15-20 minutes.
