Mock Mashed Potatoes

Ingredients

  • 1 large cauliflower head
  • 1 tsp low/no sodium chicken bouilion
  • 2 tbsp ghee or butter
  • 2 tbsp cashew milk or milk, half or half or cream
  • 2 tsp mixed herbs: garlic, black pepper, onion powder It's really all about personal preference

Instructions

  • Pre-heat oven to 375.
  • Boil cauliflower till it falls apart when stuck with a fork.
  • With food processor, blend all ingredients. Some people like to leave lumps to make it even more like real mashed potatoes.
  • Spray oven proof pan with cooking spray or coconut oil.
  • Pour mixture in pan. Add a few pats of butter if you like a more buttery flavor. Sprinkle garlic on top for added flavor.
  • Bake for 15-20 minutes.

Notes

If you are doing our detox, keep this dairy free and opt ghee over butter.
