Peanut Butter Cookies

A yummy sweet treat without the sugar!

Equipment

  • Baking sheet
  • Oven
  • Mixer

Ingredients

  • 2 eggs
  • 1/2 cup monk fruit sweetener
  • 1 tsp baking soda
  • 1/2 cup butter
  • 1/2 cup Kirkland Organic Peanut Butter or any PB with No sugar added
  • 2 1/2 cups almond flour
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

  • Pre-Heat oven to 350 degress
  • Mix butter, peanut butter, eggs and vanilla in mixer
  • Add baking soda and salt
  • Slowly add almond flour
  • Line baking sheet with parchment paper and scoop rounded TBSP size balls onto it, use fork to make cross/hash marks if you prefer
  • Recipe should make 24 cookies
  • Bake 12-14 minutes

Notes

When you are craving a treat, these hit the spot.  I prefer to use all organic ingredients to really elevate the nutrition factor on these cookies.
