Peanut Chicken

Course: Appetizer, Main Course
Prep Time: 15 minutes
Cook Time: 12 minutes
Simply delicious chicken breast tenderloins dipped in a yummy peanut sauce

Ingredients

  • 1 lb. Chicken Breast Tenderloins
  • 2 tsp Olive Oil
  • 2 tsp Sesame Oil
  • 1/4 c Peanut Butter Use un-sweetened / no sugar added PB
  • 1 1/2 Tbsp Rice Wine Vinegar Be sure it has no added sugar
  • 1 1/2 Tbsp Soy Sauce Use low sodium / gluten free
  • 1 clove Garlic minced
  • 1 Tbsp Coconut Sugar
  • 1/2 tsp Chili Powder
  • 1 lb. Green Vegetable broccoli, green beans

Instructions

  • Make the sauce first, using small sauce pan.
  • Add all ingredients except chicken into saucepan, continuously stirring.
  • Be sure to only heat the sauce enough to stir, don't boil or overcook.
  • Grill or bake chicken tenderloins; dip and enjoy.

Notes

All the taste of a sweet and tangy peanut butter dipping sauce without the sugar.  My family loves this dish.  We usually serve it with broccoli or green beans and rice or couscous.  I tend to have the chicken with the green veggie and add a salad too.
CAN'T STRESS ENOUGH...DON'T BOIL SAUCE OR YOU WILL NEED TO RE-MAKE IT.
