Equipment

  • Oven
  • Muffin Tins
  • Muffin Liners

Ingredients

  • 2 C. Almond Flour
  • 4 Scoops Collagen Protein Powder
  • 1/2 C. Monk Fruit Sweetener
  • 1/2 tsp Baking Powder
  • 1/2 C. Unsweetened Almond Milk
  • 1/2 C. Olive Oil
  • 3/4 C. Pumpkin Puree
  • 3 Lg. Eggs
  • 1/2 tsp Vanilla Extract
  • 1/4 C. Pumpkin Seeds
  • 1/3 C. Chocolate Chunks Sweetened with either Monk Fruit or Stevia

Instructions

  • Pre-heat oven to 350 degrees
  • Add dry ingredients (except for chocolate and pumpkin seeds)
  • Mix in wet ingredients
  • Scoop into lined muffin cups. Sprinkle top of muffins with 3-4 chocolate chunks and some pumpkin seeds.
  • Bake for 21 minutes.

Notes

Pumpkin + Chocolate Goodness that is healthy – grain free, sugar free and dairy free (if you get chocolate made with real cocoa butter).
