Tandoori Chicken and Vegetables

Ingredients
- 1/2 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Coriander
- 3 tsp Smoked Paprika
- 2 tsp Minced Garlic
- Pinch Sea Salt
- 3 Tbsp Extra Virgin Olive Oil
- 1 Eggplant sliced
- 1/2 lb. Multi Colored Carrots
- 4 Skinless chicken thighs
Instructions
- Mix all spices with olive oil
- Pour half of marinade over chicken and let sit for at least 30 min.
- Pour other half of marinade over chopped veggies
- Grill...and serve
Notes
This is a tasty meal with great veggies. If you'd like to add additional carbohydrates try pairing it with rice or couscous.
