Tandoori Chicken and Vegetables

Ingredients

  • 1/2 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 3 tsp Smoked Paprika
  • 2 tsp Minced Garlic
  • Pinch Sea Salt
  • 3 Tbsp Extra Virgin Olive Oil
  • 1 Eggplant sliced
  • 1/2 lb. Multi Colored Carrots
  • 4 Skinless chicken thighs

Instructions

  • Mix all spices with olive oil
  • Pour half of marinade over chicken and let sit for at least 30 min.
  • Pour other half of marinade over chopped veggies
  • Grill...and serve

Notes

This is a tasty meal with great veggies.  If you'd like to add additional carbohydrates try pairing it with rice or couscous.
