Vegan Breakfast Quiche

Equipment

  • 9-inch pie plate

Ingredients

  • 1 container Just Egg
  • 1 Tbsp coconut cream
  • 1 cup fresh spinach
  • sun-dried tomatoes to taste
  • vegan ricotta cheese to taste
  • 1 pinch Himalayan sea salt
  • 1 tsp black pepper (or to taste)

Instructions

  • Pre-Heat oven to 350-degrees
  • Blend all ingredients in pie plate
  • Cook for 30 minutes. Quiche will puff up above the pie plate while cooking and then reduce while cooling
