Cacao Chicken Chili

Cacao Chicken Chili

Equipment

  • Slow Cooker
  • Skillet

Ingredients

  • 1 lb. Organic/Pasture Raised Ground Chicken I don't recomment all white meat, you need the fat from the thighs too
  • 1 Tbsp Avocado or Olive Oil
  • 2 Carrots – shredded Or buy already shredded 🙂
  • 1/2 Red onion Chopped
  • 2 Tbsp Chili Powder
  • 1 Tbsp Cacao Powder (not Cocoa)
  • 1 pinch Cinnamon
  • 1 tsp Oregano
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 2 C. Chicken Stock (organic) If you want a thick chili, use less stock
  • 1 can Black Beans
  • 1 can Fire Roasted Diced Tomatoes

Instructions

  • In skillet add oil, onion and carrots. Cook for about 5 minutes.
  • Add ground chicken and all spices. Cook until chicken is just browned.
  • Add all ingredients from skillet and recipe into crock pot and let cook for at least an hour. The flavor gets better the longer you let it simmer.
  • Need a shortcut, cook it all on the stove, and use one bigger pot when you start.

Notes

The best comfort food is warm and good for your keeping your hormones in balance.  The chili is grain free, gluten free, dairy free and sugar free!
If you aren’t doing a detox – this soup tastes divine with a little bit or organic cheese added to the top or greek yogurt or sour cream.  Got picky eaters – crumble up some crackers or tortilla chips on top as well!
Organic Cacao Powder Used – Find at any healthy grocer-er or Costco! This is the same powder we use in our brownies and Cacao shake.
