Equipment

  • Muffin Tins
  • Muffin liner
  • Oven
  • Muffin Scoop (for even muffins)

Ingredients

  • 3 lg. Eggs Organic free range
  • 1/2 C. Olive Oil
  • 1/2 C. Unsweetened Vanilla Almond Milk
  • 1/2 tsp. Vanilla Extract
  • 1/2 tsp. Baking Soda
  • 1/2 C. Monk Fruit Sweetener
  • 40 g. Collagen Protein Powder I use unflavored peptides from Thrive Market
  • 1 C. Almond Flour
  • 1/2 C. Golden Flax Seed Flour Now Foods has a great Organic One
  • 1/2 C. Coconut Flour Now Foods has a great Organic One
  • 1/2 C. Chopped Walnuts
  • 3/4 C. Fresh Fruit Any kind of berries works great, and banana here is ok too!

Instructions

  • Preheat over to 350 degrees
  • Line muffin cups
  • Mix all wet ingredients
  • Add in dry ingredients
  • Add in fruit last
  • Bake for 21 minutes

Notes

These little muffins are full of fiber, protein and good fats!  The perfect little snack or addition to your breakfast / pre or post workout.
