Easy Chicken Veggie Soup

Ingredients
- 4-6 Chicken Thighs
- 1 onion chopped
- 5-6 large carrots I love the multi colored carrots for a different flavor
- 3 cloves garlic
- 4-6 stalks celery
- 1 bag baby spinach chop and add in the last 10 minutes before serving
Instructions
- Place chicken at bottom of crock pot
- Chop all veggies and put on top of chicken
- Add 4-6 cups of water
- When chicken is tender and cooked, shred or break up with a spoon
- 10 minutes prior to serving, chop spinach and add to soup
Notes
This is a great recipe since it is missing what most soups have added - cream, sugar, sauces, etc. Try adding additional veggies. If you'd like to add grains/carbs, follow the directions on the package and add them towards the end of cooking. You might need a little additional water.
