Easy Chicken Veggie Soup

Dairy Free, Gluten Free, Grain Free, Sugar Free - loaded with vitamins! Just chop, put in slow cooker and its ready hours later.

Equipment

  • Crock Pot
  • Knife
  • Cutting board

Ingredients

  • 4-6 Chicken Thighs
  • 1 onion chopped
  • 5-6 large carrots I love the multi colored carrots for a different flavor
  • 3 cloves garlic
  • 4-6 stalks celery
  • 1 bag baby spinach chop and add in the last 10 minutes before serving

Instructions

  • Place chicken at bottom of crock pot
  • Chop all veggies and put on top of chicken
  • Add 4-6 cups of water
  • When chicken is tender and cooked, shred or break up with a spoon
  • 10 minutes prior to serving, chop spinach and add to soup

Notes

This is a great recipe since it is missing what most soups have added - cream, sugar, sauces, etc.  Try adding additional veggies.  If you'd like to add grains/carbs, follow the directions on the package and add them towards the end of cooking.  You might need a little additional water.
