Mushroom Curry

Ingredients

  • 1 jar curry sauce my fave is trader joes - either one
  • 2 cups rice cauliflower or Jasmine
  • 3-4 portablla mushrooms chopped up
  • 1 can coconut milk use full fat, NOT light

Instructions

  • Add curry sauce and coconut milk to pot, bring to simmer
  • Cook rice (or cheat with easy rice)
  • Chop up mushrooms, add to curry sauce and simmer until mushrooms or softer
  • Pour sauce over rice and enjoy

This is a super easy and simple meal to make.  And you can add anything you like to it.  This one is plant-based, but you can add...
  • Chicken
  • Sausage
And if you want more veggies, in the last 5 minutes of simmering add either green beans or broccoli.  Can also be made with button mushrooms too.
