Almond Nuggets

Almond Bathed Chicken Nuggets

Everything you love about chicken nuggets and none of the guilt.

Equipment

  • Oven

Ingredients

  • 1/2 C. Unsweetened Almond Milk be sure it does not have vanilla flavor or any sweetener
  • 1/4 tsp Garlic Powder
  • 1 C. Almond Flour
  • 1 Large Egg
  • 1/4 C. Parmesan Cheese
  • 1 tsp Italian Seasoning I used Trader Joes Everything Seasoning
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 lb. Chicken Thighs Organic – pasture raised please!
  • Olive or Avocado OIl Spray

Instructions

  • Pre-heat the oven to 425 degrees.
  • Cut chicken into nugget sized pieces
  • Mix almond flour, seasonings and parmesan cheese in one bowl
  • In another bowl mix egg and almond milk
  • Prepare baking sheet. I line mine with parchement paper and give it a light spray with cooking oil
  • Dip nuggest into egg/milk mix and then roll in almond mix
  • Place on pan
  • Cook for about 20 minutes; be sure to flip them over half way through cooking

Notes

These were such a treat!  I highly suggest you use the chicken thighs as they give you the extra fat, making these taste amazing.  My kids kept going back for seconds.
We served them with a low sugar bbq sauce, mashed potatoes and asparagus.
