Chicken Coconut Rice

So, this title might be a little mis-leading, there are no grains in this soup! The creaminess comes from organic coconut milk – which means its dairy free too.

Equipment

  • Crock Pot or Slow Cooker

Ingredients

  • 1-1.5 Lb Organic Skinless Chicken Thighs
  • 1/2 Onion (chopped)
  • 6 Carrots (chopped)
  • 3-4 Celery stocks (chopped)
  • 3 Cloves of Garlic (minced)
  • 12 oz. Frozen Cauliflower Rice
  • 1 Tbsp Avocado Oil
  • 32 oz. Chicken Stock
  • 1 can Full Fat Coconut Milk
  • 1/2 tsp Tumeric, Paprika, Sea Salt
  • 1/4 tsp Cayenne Pepper

Instructions

  • Add chicken stock, coconut milk and chicken to crock pot. Set on high for 4 hours.
  • In skillet – add oil and veggies. I like to stir-fry them about 10 minutes before adding to the crock pot.
  • As you are cooking the veggies, sprinkle with spices. Pour everything into crock pot.
  • After 4 hours, take out chicken and cut up, then return to crock pot and turn on low to simmer.

Notes

This soup is creamy and comforting without the grains, pasta, rice and dairy. 
Not going grain-free, serve this with a great crusty bread or garlic naan.  Got a Trader Joe’s near you…instead of chopping the carrots, celery and onion use their Mirepox – its already chopped and ready to go!
