You've gotta love when one recipe - salsa chicken can turn into at least 6 other different recipes on our site. This super simple recipe is my favorite when you want a little spice and something easy to prep while on the go! At only two ingredients, it doesn't get much better.

If you are going to be using your salsa chicken for other recipes during the week, be sure to read the notes at the bottom of the recipe to ensure you make enough.
Salsa Chicken
One pot mexican chicken
- 1.5 lbs Chicken Breast or Thighs
- 2 cups Salsa (any variety works, be sure it is low to no added sugar)
Add both ingredients into crock pot and cook on low for 6-8 hours, or on high for 4 hours.
When chicken is done use two forks to shred. Add to any recipe or eat as tacos!
The yummiest and easiest chicken to make! I prefer to use all organic pasture raised chicken thighs for the best taste! Detox approved with zero sugar added salsa!

If you are going to be using this protein for another recipe, double the meat for every recipe. When I make this, I always turn it into 2 recipes, and so I use 3 lbs. of chicken, for a family of 4.
